For Christmas 2018, Flavourology mixed the time-honored with the avant garde to create an interactive, multi-sensory dining event, which was enjoyed within an art and light installation in Noho Studios, central London.

For up to 80 guests, this Scandinavian edible adventure was perfect for foodie groups in search of an alternative to the turkey and tinsel. The experience aimed to satisfy a traditional palette and excite the discerning diner, while engaging everyone in five exceptional gastronomic experiences uniting sights, sounds, smells and flavours inspired by Scandinavian folklore & festivities.

The Menu

One. FORAGE. Diners followed clues on their foraging map to explore the flavours laid out before them. Canapés created ice breakers and the guests discover the hidden delights of the table.

Two. CURE. Flavourology divulged a secret curing recipe for diners to take home and try for themselves. We made half the recipe and guests finished them at the table. ​ The dish - Spiced Akavit & tarragon cured cauliflower w/ charred cucumber, lime & fennel remoulade, edible borage flowers.

Three. CHIME. Following Scandinavian folklore – guests chimed the bells to ward off the trolls then ground a pestle & mortar full of leaves, spices, seeds, oil & vinegar to create the sauce for the dish.

Four. FEAST. The main course represented all that is best about Christmas – luxury, tradition, exchanging of gifts and the retelling of fond memories. The dish - Roast duck breast w/ confit duck leg pastilla, cocoa nibs, celeriac choucroute & glögg reduction sauce // sweet potato & thyme gratin on the side.

Five. SMOKE. Fireside comfort brought to your dessert through smoked meringue, served with a warming, home-mixed digestif - Mr Blacks coffee liqueur & molasses brown sugar syrup.
