We decided it was time to give the world a sneak peek of what the team here at Flavourology are up to.

For one night only we invited industry guests to come and explore our top secret lab, meet our professors and take part in a series of flavourological experiments in physics, biology, chemistry and memory.


Physics: Fire & Ice Station
Smoked salmon with pickled apple & herb powder
Smoked beetroot with chocolate soil, maple leaf & goat’s curd
Tuna tartare with wasabi avocado, yuzu dressing, ginger & sesame
Watermelon, feta, mint oil, fresh mint & radish salad

Biology: Forest Bay
Hollowed out eggs sitting in nests:
Mango & coconut ‘dippy egg’ panna cotta with brioche soldier
Cauliflower, manchego & harissa ‘dippy egg’ panna cotta with brioche soldier

Chemistry: Med Bay 
Guinness sorbet with a taste injection of either smoked hay caramel, raspberry or umami

Memory: Regency Experience
Herb salad with goat’s cheese fritter, marinated plum & lavender syrup

Circulating Canapés
Black rice sushi with avocado, sriracha mayo & growing enoki garden
Oyster fritter with horseradish and lemon
Compressed cucumber with lobster, curried mango gel & micro coriander
Crispy pork belly with pineapple sambal
Chicken liver parfait encased in a pickled cherry shell with bronze lustre & chive ‘stalk’
